I grew up in Enugu before moving to Port Harcourt on the coastline in Nigeria eating long grain jollof spiced with meat and fresh fish, never giving much thought to its history or dominance across most of West Africa. For me it was commonly prepared on Sundays after church service, at parties, family gatherings, engagement parties, weddings and coming of age ceremonies.

It is never complete in a Nigerian home without the presence of Jollof rice. Jollof rice is a common food prepared in different parts of West Africa, but the difference is that these countries have their own style of preparing it. This is about the Nigerian style of Jollof Rice which I think stands unique from the rest.
